Physicochemical characterization, bioactive compounds and antioxidant capacity of the juice and flour of secondary cladodes of Opuntia ficus-indica

Prickly pears (Opuntia ficus-indica) are one of the most valued species due to their ability develop on soils with low access nutrients and water great nutritional value in fruits leaves. However, frequent pruning "secondary cladodes" generates agroforestry residues thatdonothave a secondaryuse, hence present study sought characterize bioactive properties from district Santiago de Tunato baseline for its possible ulterioruse as raw material. For assays, two types samples were used: juice flour cladode, which proximate analysis was conducted, concentration polyphenols, Vitamin C, flavonoids, antioxidant activity determined. The presented yield 53% while 7.3%. Both considerable amountsof polyphenols (105.1 mg GAE/100g -769 GAE/100g), vitamin C (56.2 AA mg/100g -114.6 mg/100g) capacity (1247.94 μmol Trolox/g -2585 Trolox/g). Therefore, results indicated that cladodes can be used products exciting potentialin food industry.
